Classic Sourdough Pancakes

Ingredients

Sponge

  • 227g (1 cup) sourdough starter ("unfed/discard")
  • 454g (2 cups) buttermilk (or equiv)
  • 240g (2 cups) King Arthur Unbleached All-Purpose Flour
  • 28g (2 tablespoons) granulated sugar

Batter

  • sponge
  • 2 large eggs
  • 1/4 cup (50g) canola oil
  • 1 teaspoon baking soda
  • 3/4 teaspoon table salt

Notes

The sponge is an overnight thing. The next day, be sure to beat together the new ingredients before mixing into the sponge.
