Classic Sourdough Pancakes

Ingredients
Sponge
- 227g (1 cup) sourdough starter ("unfed/discard")
- 454g (2 cups) buttermilk (or equiv)
- 240g (2 cups) King Arthur Unbleached All-Purpose Flour
- 28g (2 tablespoons) granulated sugar
Batter
- sponge
- 2 large eggs
- 1/4 cup (50g) canola oil
- 1 teaspoon baking soda
- 3/4 teaspoon table salt
Notes
The sponge is an overnight thing. The next day, be sure to beat together the new ingredients before mixing into the sponge.
