Granola

Ingredients

  • 660g rolled oats
  • 75g wheat germ
  • 7g salt
  • 5g cinnamon
  • 140g olive oil
  • 160g maple syrup
  • vanilla
  • ~150g nuts (pecans and/or walnuts)
  • 75g quinoa (optional, swapped in for some oats)

Notes

Mix oats, wheat germ, salt, cinn in a big bowl (and quinoa, if using). Whisk wet ingredients together and then stir well into grains. Chop nuts and add them last.

Spread over 2 baking trays. Bake at 350 for 40 minutes. Watch for burning; rotate if needed. Don't stir. Allow to cool before breaking up.
