Starter warm-up process

Ingredients

Initially:

  • 50g starter
  • 100g water (90-95˚)
  • 100g white flour

Give it 8-12 hours. To the bowl, add:

  • 100g water (90-95˚)
  • 100g white flour

Give it overnight. To a fresh bowl, add:

  • 50g newly hot starter
  • 100g water (90-95˚)
  • 100g white flour

Notes

Ken calls for 50-60g starter, depending on air temps.
